Ingredients

1 cup whipping cream

1 cup canned unsweetened coconut milk

1/3 cup Among Friends Biodynamic Cane Sugar + more for topping

Pinch of salt

6 egg yolks

Zest of 1 lime (about 1 Tablespoon)

Juice of 1 lime (about 2 Tablespoons)

OPT 1/2 teaspoon coconut extract

OPT for garnish: whipped cream, coconut shreds, and lime slice

Instructions

STEP 1

Combine ½ cup each of cream and coconut milk, 1/3 cup Among Friends Biodynamic Cane Sugar, salt, and lime zest in a medium saucepan and bring to a boil over medium heat.

STEP 2

Remove pot from heat, cover, and let sit for 10 minutes.

STEP 3

While the cream is resting, preheat the oven to 300°F and prepare the pans: place a dish towel in the bottom of a 9×13 inch baking pan, place 4, 4-5oz or 2, 8-10 oz ramekins or oven-safe dishes on the towel in the pan. Boil enough water to fill the pan.

STEP 4

Stir in the remaining 1/2 cup each cream and coconut milk.

STEP 5

In a mixing bowl whisk egg yolks until uniform, very slowly pour warm cream mixture into eggs while whisking constantly to form custard.

STEP 6

Strain custard through fine mesh sieve, discard any solids caught in the mesh.

STEP 7

Mix lime juice and coconut extract if using into strained mixture, and divide the custard evenly between the prepared ramekins.

STEP 8

Carefully pour the boiling water in the pan to surround the ramekins: the water level should come up about 2/3 up the side of ramekins. Place the pan in the preheated oven, very slowly as not to splash any water into the custard..

STEP 9

Bake 25-35 minutes (times will vary greatly depending on the shape and size of your ramekins) until the temperature reaches 170°F. The custard will still be loose, but will set as it cools.

STEP 10

Cool ramekins on wire rack until completely cool about 2 hours.

STEP 11

Wrap tightly with plastic wrap and chill in the fridge at least 4 hours or until ready to serve.

STEP 12

Unwrap ramekins and blot top of custard dry. Cover top of custard completely and evenly with Among Friends Biodynamic Cane Sugar (custard will scorch if left uncovered by sugar). Use a kitchen torch to caramelize sugar until medium-dark caramel color. OR place ramekins under broiler for 2-3 minutes watching to make sure it doesn’t burn.

STEP 13

If desired garnish with whipped cream dollop, coconut shreds and lime slice.
